Microgreens are delicate living plants. Once harvested, they continue to respire, which can lead to wilting if not stored correctly. Unlike robust mature vegetables, microgreens require a gentle touch and specific conditions to maintain their crisp texture and concentrated nutrients.

Temperature Control

The golden rule for microgreens is: keep them cool. The ideal temperature range is between 2°C and 4°C (36°F - 40°F). This slows down their respiration rate and preserves their sugar content. Always store them in the refrigerator, preferably in the crisper drawer where the temperature is consistent but not freezing.

Pro Tip: Wash Only When Ready

Never wash your microgreens before storing them! Excess moisture is the enemy. Water promotes bacterial growth and causes the delicate stems to turn mushy. Only wash the amount you plan to eat immediately before serving.

The Right Container

We recommend storing microgreens in an airtight container with a paper towel placed inside. The airtight seal prevents them from drying out in the fridge's low humidity, while the paper towel absorbs any excess condensation generated by the plants themselves. Change the paper towel if it becomes damp.

Shelf Life Reality

While some hardy varieties like pea shoots and sunflower can last up to two weeks if stored perfectly, most delicate greens like basil or amaranth are best enjoyed within 5-7 days of harvest. Eating them fresh ensures you get the maximum vitamin availability.
